I smoked Beef cheeks for the 1st time. I was not sure about trimming but I kept most of the fat on. I seasoned it over night and place on my smoker for 4 hours, then I placed in oven on 350 for 2 1/2 hrs. When I tell you it was so delicious and tender. The fat melted and was so good.

Smoked 8 lbs of cheeks today for 1st time ever. Black Pepper, a bit of Carnivore Red and Totally covered with Carnivore Black. Started at 275 then ⬇️ to 250 on a Yoder using post oak pellets.
I pretty much butchered the 1st one trimming but once I figured them out it was easier.
    FANTASTIC! AN ABSOLUTE HIT!

An absolute winner. We made this on the smoker my daughter helped me put together for Christmas. We added some turbano sugar and paprika to Jess’s rub to make it ours. We spent the afternoon in the sun, welcoming spring to the northern counties of Maine. Cheers! Bonus level nachos for everyone!
