The rich flavor of Australian lamb pairs beautifully with the deep chile flavors of birria in these ridiculously good tacos.

Birria is usually associated with beef, but smoked lamb might honestly be the version that deserves more attention. Lamb already has a naturally rich, savory flavor that feels made for deep chile sauces and long cooking. When you add wood smoke into the mix, it becomes something seriously special.

What makes this smoked lamb birria recipe stand out is the balance between bold flavors and low effort. You still get that intensely flavorful consommé, the tender shredded meat, and the crispy taco experience everyone loves about birria, but the smoker adds another layer entirely. The smoke settles into the fat of the lamb and gives every bite a subtle campfire quality that works well with the warming spices in the broth. The lamb leg is a great cut for this style of cooking because it becomes tender without losing its texture. It’s a little leaner than shoulder but that finished texture means the tacos have a more satisfying bite. It’s rich without being overwhelming, especially once you pile it into tortillas with fresh onion, cilantro, and salsa. I always buy Australian lamb where possible – it’s got great genetics, heritage and flavor.

One thing worth pointing out: the hot sauce in this recipe isn’t really there to make the lamb spicy. Instead, it acts as a binder, helping the BBQ rub stick evenly across the surface of the meat. It also adds a little acidity and tang that balances the richness of the lamb. You can use almost any Mexican-style hot sauce you like here. The flavor will mellow significantly during the long cook.

The BBQ seasoning may sound unconventional for birria, but a sweet-and-savory rub like Hot Honey Butter works surprisingly well. As the lamb cooks, the seasoning combines with the beef broth and birria base to create an intensely flavorful braising liquid that’s perfect for dipping tacos. Also – if you prefer to finish in an oven instead of a smoker, that’s fine too – once you cover in foil, it’s not going to receive any more smoke anyway.

This is also one of those meals that feels impressive the second it hits the table. A pan full of smoky shredded lamb, stacks of tortillas, bowls of consommé for dipping… It’s a combo that’s hard to beat. It naturally turns into the kind of dinner where everyone hovers around the kitchen assembling tacos and going back for another round.

Smoked Lamb Birria

Ingredients

Units Scale

1 x Australian lamb leg, boneless or butterflied

2 tablespoons Mexican hot sauce

3 tablespoons BBQ rub (I use Hot Honey Butter)

2 cups beef broth

1 birria bomb

Tortillas, cilantro, onion & salsa to garnish


Instructions

  1. Preheat a smoker to 250F.
  2. Rub hot sauce over the lamb leg, then season well with BBQ rub.
  3. Place the seasoned leg into the smoker, and cook for 4 hours.
  4. Transfer the leg to a foil pan, and add birria seasoning bomb and beef broth, then cover with foil (make sure to seal it well!). Increase heat to 300F, and let the lamb braise for another 4 hours.
  5. Remove from smoker, and allow to rest in the pan for 30 minutes before pulling. Serve alongside garnishes to make birria tacos.
