Smoked Pork Belly, brisket style

Ingredients

1 x 5-6lb slab of pork belly, skin off

1/41/3 cup Hardcore Carnivore Red seasoning

1/2 cup of water

1/2 cup cider vinegar


Instructions

  1. Preheat a smoker or pellet grill to 275°F.
  2. Slice the belly in half lengthways.
  3. Season well on all sides with Red seasoning, then place onto the smoker.
  4. Combine the water and cider vinegar into a spray bottle.
  5. Cook the pork belly for 5 to 7 hours, spritzing every hour as it cooks. It should measure at least 200°F internal temperature and feel very soft and malleable when done.
  6. Wrap the pieces in butchers paper, then place into an insulated cooler to rest for at least 30 minutes and up to two hours.
  7. Slice and enjoy
