1 x rack of lamb, 6-8 bones
2 teaspoons olive oil
3-4 tablespoons Hardcore Carnivore Camo seasoning
- Preheat oven to 450f.
- Prepare lamb rack by coating it with the olive oil, then the seasoning. Ensure the entire rack including bottom and sides is covered.
- Line a tray with foil, then place a baking or meat rack on top. Put the lamb rack on the rack, and then place in the oven.
- After 12 minutes, check the internal temperature of the lamb using an instant read thermometer. If it reads 125f or higher, remove the rack and rest. If the meat reads below 125f, reduce oven to 325f. Continue to cook, checking every 6-8 minutes until the lamb reaches 125f for rare/medium rare, or 135f for medium rare/medium.
- Rest the finished rack loosely under foil for 8-10 minutes, then slice and serve.
