Spicy & Fragrant Jerk Seasoning

The classic rub of the Caribbean, Jerk seasoning is fragrant with spices like allspice, ginger with a fiery kick of cayenne.

I certainly can’t claim this as an authentic recipe, but I can guarantee it’s a tasty one. Jerk seasoning recipes vary greatly – some have 6 or fewer ingredients, some have more than 10. I tested a few different combinations before settling this one, and have used it ever since. Because this rub has a few more unusual spices, it’s worth doubling or tripling the recipe and storing the extra rub for next time.

I recommend trying this rub with my grilled Jerk Chicken recipe which uses juicy chicken thighs for maximum flavor.

Recipe: Spicy & Fragrant Jerk Seasoning

Ingredients

Scale

1 teaspoon garlic powder

1/2 teaspoon ginger powder

1/4 teaspoon cayenne pepper

1 tablespoon dried thyme powder

2 teaspoon white sugar

1 tablespoon kosher salt

2 teaspoons allspice powder

1 teaspoon cracked black pepper

1 teaspoon cinnamon

1/2 teaspoon red pepper flakes

1/2 teaspoon ground cloves.


Instructions

  1. Combine all spices in a bowl, mix well. Pour contents into airtight jar for storage. If the content settle, shake the jar before use.

Notes

Unused seasoning can be stored in an airtight jar in a cool dry place for up to 3 months.
