Grapefruit is an unexpected citrus for marinades – but I found out it’s incredible with chicken.

 

Citrus and chicken are a natural pairing, but most people instinctively reach for orange, or maybe lemon or lime. Grapefruit, on the other hand, tends to get overlooked. It’s often dismissed as too bitter or sharp for cooking, but that’s what makes it so interesting. When used right, grapefruit brings a bold, slightly sweet-tart complexity that transforms a weeknight chicken dinner into something memorable.

The pink grapefruit juice doesn’t just flavor the meat. It works as a tenderizer, gently breaking down the chicken while infusing it with bright, citrusy depth. Unlike orange, which leans sweet, grapefruit has an edge. It cuts through the chicken and provides balance to the smoky char from the grill and the earthy heat from the chilies. The result is a layered flavor profile that feels both fresh and deeply satisfying.

The rest of the marinade ingredients in this recipe builds on that citrus foundation. Guajillo peppers bring a mild, fruity warmth, while chile de árbol adds a sharper heat that lingers just enough. Garlic rounds everything out with a savory backbone, and the salt ensures every bite is well-seasoned all the way through. As the chicken rests in this mixture, it soaks up all those flavors, becoming incredibly juicy and aromatic.

Once it hits the grill, that’s when everything comes together. Grapefruit Chicken Marinade

Ingredients

6 guajillo peppers

4 chile de árbol

46 chicken leg quarters

8 cloves garlic, smashed

8 cups grapefruit juice

2 tablespoons salt

2 cups water

Hardcore Carnivore Tex Mex seasoning


Instructions

  1. Toast the chiles in a dry skillet until fragrant, then remove and discard seeds and stems. Place into a bowl and cover with boiling water. Let soften 10 minutes.
  2. Place the chicken into a deep container, and add the garlic, grapefruit juice & salt.
  3. Put the softened chiles in a blender along with 1/2 cup of the soaking water. Blend until smooth, then add to the chicken marinade. Stir well, then place into the fridge for 4-6 hours.
  4. Light a grill for medium two-zone cooking, coals to one side.
  5. Remove the chicken and discard the brine, then season well with Tex Mex.
  6. Grill the chicken over direct heat for 5-7 minutes, flipping every few minutes to avoid burning. Then move it to the indirect heat side, close the lid and cook until internal temp reaches 165F.
