Oxbow Bakery’s Buttermilk Pie

  • Author: Jess Pryles

1 stick (4oz) unsalted butter, melted

2 cups sugar

1/4 cup all purpose flour

1/4 teaspoon nutmeg

4 eggs

2 teaspoon vanilla extract

1 cup buttermilk

pinch salt

one 910 inch pie crust

  1. Preheat an oven to 350f.
  2. In a large bowl, combine melted butter, sugar, flour, salt and nutmeg.
  3. Using a paddle attachment of a stand mixer, beat until well combined.
  4. Add eggs, vanilla and buttermilk, beat to combine. Scrape down the sides of the bowl and beat once more.
  5. Pour the filling into the prepared pie crust, and place pie into the oven. To catch any overflow, I recommend putting the pie dish onto a tray.
  6. Bake for 10 minutes, then turn heat down to 300 and continue to bake for another hour.
  7. Remove from oven and allow to cool completely before slicing and serving.
