Grilled Watermelon Bourbon Smash

Your food isn’t the only that that should be grilled – char flavor is the secret ingredient in this summertime grilled watermelon cocktail.

 

Ok hear me out, I know you may not have considered grilling fruit before, but you definitely should. Grilling intensifies the flavor, sweetness and color of watermelon, and adds a subtle flavor to this bourbon-laced cocktail. With mint and ginger beer in the mix, this is the perfect beverage for cooling off on hot summer days, and since you can make a bit pitcher it’s ideal for any get-together with friends and family.

Part of the method is to leave the watermelon in really chunky pieces for grilling – that’ll help to ensure it stays intact on the grill. You’re really just looking to add char and color, not actually “cook” it.  To start, cut the rind off the watermelon and slice it into 2 inch pieces. When your grill is nice and hot, add the slices to direct heat, flipping once to char both sides. You can spritz a little neutral oil on either side, which can help encourage the sear.

Once off the grill, thoroughly blend the watermelon, then strain into a pitcher using a fine mesh strainer. Add your favorite bourbon – (or your preferred alcohol of choice) – and the rest of the ingredients. Adjust the simple syrup, mint leaves, and ginger beer to your liking. What I really love about this drink is that is endlessly customizable. You can experiment with other herbs like basil, add a splash of lime juice for a zesty tang, or even make it a non-alcoholic mocktail by substituting sparkling water for the bourbon and ginger beer. However you make it, it’s sure to leave your guests asking for another round. Serve this over ice or in chilled glasses, and you can even add a salt rim to amp it up a little. Garnish with fresh mint leaves for an added touch of color and flavor.

Grilled Watermelon Bourbon Smash

Ingredients

1/4 large watermelon
2 cups bourbon
1/2 cup simple syrup
1/2 cup fresh mint leaves
12 cups ginger beer
ice


Instructions

  1. Cut the rind off the watermelon, then cut into 1-2″ slices.
  2. Grill watermelon until charred on both sides (you can add a tiny spritz of oil to help it along).
  3. Blend the grilled watermelon, then strain through a mesh strainer into a pitcher.
  4. Add your bourbon of choice along with ice, simple syrup, and tear the mint leaves by hand and add in. Top with ginger beer to taste.

Makes one 64 oz. pitcher.
