Grilled cheese just got an upgrade. Taking a cue from black forest ham, this sandwich is loaded with jammy bourbon cherries.

2 slices sourdough bread, buttered
2 slices swiss cheese
4 slices deli ham
For the jammy bourbon cherries:
1 cup frozen cherries
1/2 cup white sugar
pinch cinnamon
1 teaspoon fresh cracked black pepper
1 tablespoon salted butter
1 tablespoon lemon juice
2 tablespoons bourbon
Instructions
- Start by making the sauce – combine cherries, sugar, cinnamon and pepper in a small saucepan over medium heat. Cook for 5 minutes, stirring occasionally and using the spoon to break up the cherries as they soften. Reduce heat to a simmer and cook a further 10-15 minutes until reduced and thickened.
- Remove the cherry mixture from the heat and stir in the butter, bourbon and lemon juice, then set aside and allow to cool.
- Heat a skillet or griddle to medium heat. Place one slice of sourdough in, butter side down. Layer on a generous amount of the jammy cherries, then then swiss slices, then fold the ham slices and add them in, too. Place the other sourdough piece on top, butter side up.
- Cook for 4-6 minutes, until a golden brown crust has formed, then gently turn over and cook until the other side is brown and the cheese is melted.
- Serve immediately.
