Grilled cheese just got an upgrade. Taking a cue from black forest ham, this sandwich is loaded with jammy bourbon cherries.

Grilled Ham & Cheese with jammy bourbon cherries

Ingredients

2 slices sourdough bread, buttered
2 slices swiss cheese
4 slices deli ham

For the jammy bourbon cherries:
1 cup frozen cherries
1/2 cup white sugar
pinch cinnamon
1 teaspoon fresh cracked black pepper
1 tablespoon salted butter
1 tablespoon lemon juice
2 tablespoons bourbon


Instructions

  1. Start by making the sauce – combine cherries, sugar, cinnamon and pepper in a small saucepan over medium heat. Cook for 5 minutes, stirring occasionally and using the spoon to break up the cherries as they soften. Reduce heat to a simmer and cook a further 10-15 minutes until reduced and thickened.
  2. Remove the cherry mixture from the heat and stir in the butter, bourbon and lemon juice, then set aside and allow to cool.
  3. Heat a skillet or griddle to medium heat. Place one slice of sourdough in, butter side down. Layer on a generous amount of the jammy cherries, then then swiss slices, then fold the ham slices and add them in, too. Place the other sourdough piece on top, butter side up.
  4. Cook for 4-6 minutes, until a golden brown crust has formed, then gently turn over and cook until the other side is brown and the cheese is melted.
  5. Serve immediately.
