Grilled Cheese Sandwich with Smoked Ham and Blueberry BBQ Sauce

2 slices thick cut sourdough bread

6 oz sliced smoked ham

3 slices provolone cheese

3 slices Monterey Jack cheese

½ cup BBQ sauce

¼ cup frozen blueberries

3 tablespoons mayonnaise


Ingredients

  1. Place sauce and blueberries in a small saucepan over low heat. Stirring occasionally, warm for 3-5 minutes until berries are defrosted. Use an immersion or stick blender to blitz together the blueberries and BBQ sauce, then set aside.
  2. Assemble the sandwich by starting with one slice of bread, then layering with the provolone cheese. Next, layer the smoked ham on top of the provolone, folding each round in half, then overlapping slightly. Layer the Monterey Jack on top of the ham.
  3. Use a knife or the back of a spoon to spoon a generous amount of blueberry BBQ sauce over the other slice of bread, then place it sauce side down onto the sandwich to finish it. Spread half the mayonnaise on the very top of the exposed slice of bread (mayo should be on the “outside” of the sandwich).
  4. Place a cast iron skillet over medium heat, and allow to preheat at least 5 minutes.
  5. Gently lay the sandwich mayonnaise side down into the pan. Spread the remaining mayo over the other slice of bread, which should now be the top layer.
  6. Griddle the sandwich undisturbed for 5-7 minutes, then use a spatula to help you gently flip it over. Cook a further 5-7 minutes.
  7. If the sandwich is not as golden brown or melty as you wish, flip again and cook a further 3-5 minutes per side.
  8. Serve while warm and gooey!
