There’s something about a tray of sausage bites that disappears faster than almost any other appetizer.
Maybe it’s the buttery puff pastry, maybe it’s the smoky sausage, or maybe it’s just the fact that they’re ridiculously easy to grab straight off the pan while nobody’s looking. Either way, this is the kind of recipe you keep in your back pocket for game days, holiday gatherings, backyard hangs, or those moments when you need something fast that still feels homemade.
The best part? You barely need a recipe. Just a box of puff pastry and a packet (or two) of smoked sausage. Of course, I use Hardcore Carnivore smoked sausages, which are only available at select HEB stores here in Texas. So use whichever smoked sausage you like. I usually end up taking these when we go visit with friends – I keep the pastry in the freezer and always have sausages on hand, so it’s the perfect “OMG, what do I bring?!” recipe, with very little effort.
One of the fun parts about these bites is how customizable they are. Depending on the flavor profile of your sausage, you can switch up the binder and toppings to make them feel totally different every time. A swipe of mustard adds tang, or you could even go sweet-spicy with hot honey or lean savory with a hot sauce binder. It’s not essential, but the binder helps the puff pastry adhere to the sausage as it cooks, and adds in a little extra character. For toppings, options like sesame seeds, poppy seeds, or everything bagel seasoning can add extra texture and flavor. Sometimes, I just sprinkle a bit of cayenne over the top to really kick up the heat. That’s it! Minimal effort, maximum payoff.
They’re crispy on the outside, smoky and savory in the center, and dangerously snackable while still warm. Serve them with mustard, ranch, barbecue sauce, or honestly nothing at all. These sausage bites rarely make it to the serving platter before people start grabbing them straight from the tray.

Smoked Sausage Bites
Ingredients
- 1 box puff pastry sheets
- 4–6 links of smoked sausage
- Yellow mustard, hot sauce or binder of choice
- 1 egg, whisked
Instructions
- Preheat an oven to 400f.
- Allow your puff pastry to thaw in the fridge, then roll it out onto a board.
- Spread a thin coat of your preferred binder over the surface of the pastry.
- Cut the pastry into sections roughly the length of the sausage, and long enough to wrap one around each one. Then, fold the pastry over each sausage, sealing the join line by pressing with your finger.
- Slice each wrapped sausage into bite-sized rounds and place them on a baking tray lined with parchment paper.
- Brush the tops with egg wash (whisked egg) using a pastry or silicon brush. If you’re using a topping like seeds or pepper, sprinkle a little onto the egg washed bites.
- Bake in the oven for about 15 minutes, until the pastry is puffed and deeply golden brown.
